Using the carbon steel pan
To protect the pan from oxidation, it is delivered coated with natural flax oil, which should be removed before first use by washing in hot soapy water.
This pan requires seasoning – a process where a heated fat or oil bonds with the pan to create the surface that will protectthe pan against rust. Seasoning can be done by pouring in one centimetre of oil and heating it for 5 minutes. Once the oil is cool, remove it and wipe the pan with kitchen towel or roll.
The more the pan is used, the less sticky it becomes, as the regular use will build the non-stick 'patina’ on its surface, and the pan will gradually change the metallic colour to brown/black.
Hand wash only. Carbon Steel products are not suitable to be used in dishwashers. After cooking the pan should only be wiped out with the kitchen.
Always store the pan in a dry place to avoid rusting. If light rust spots do occur,they can be removed with a scourer, but the seasoning process should be repeated before further use.
The cooking of acidic food, such as tomatoes, may produce staining and if this occurs, the pan should be re-seasoned.
